The following cases illustrate the ways wineries profit from the Aromatica process…

Mature Brand.

Sometimes it’s all about lowering costs. For a high volume producer making just under 1 million cases of a clearly-defined wine style and quality, the challenge was sourcing grapes cost effectively enough to meet margin targets. The solution was capturing aromatic wine spirits with the Aromatica process, and using them at blending to bring lower cost fruit up to the target quality. In this case, the producer went from 75% North Valley Cab, to 50% North Valley and 25% South Valley Cab, resulting in ~$826K of incremental year-1 gross profit.

Growing Brand.

Sometimes you can’t keep up with demand. This winery could produce 100K cases of a premium Central Coast Chardonnay. However, they could sell 110K cases, if only they could source fruit up their standards. By capturing Aromatica from their existing production, they were able to bring in another 150 tons of grapes, and bring this fruit up to their exacting style and quality standards. This yielded ~$528K of incremental year 1 gross profit.

Premium Brand.

Sometimes it is all about pouring as much quality as you possibly can in to a platinum reserve. This small producer was able to command an additional $5.5 per bottle through retention of all the aromatics which would have normally been lost. Making good wine great with Aromatica.

Repairing Damaged Wine.

Aggressive Reverse Osmosis filtration for Volatile Acidity, de-alcoholization, taint removal, or for other reasons can often solve the problem, but leave the wine bereft of desirable aromatics. Using previously captured Aromatica condensate can be a life saver. This small producer took his North Coast Pinto Noir from unsellable to award winning (Silver Medal San Francisco Chronicle Wine Competition).
